Recipes for One
Whether you live alone or are just solo for a meal, sometimes it's nice to only have to cook for yourself. I've gotten a little help from my friends and put together some recipes to make your alone time quite tasty.

It's true that being an independent woman can mean so many different things, but for me food and independence go hand in hand. Independence for me came during my eight years in NYC (most of them spent single) when I could independently rent a movie, go home and eat takeout. In fact, my world of independence came with a lot of precooked meals and restaurant eating. While I am still uncomfortable about going to a movie alone (I know, I know) eating at a restaurant by myself was and still is a treat. I love bringing in a good book or a magazine and just enjoying the time spent out and alone. And even now that I am married and living in LA, independence flies in on nights when my husband is out playing poker or working. I cook up a big bag of popcorn and grab a nice bottle of wine, some strawberries, order sushi and enjoy my freedom.
I know that I instantly get energized if I'm entertaining or set to the task of making a large meal for friends, but it's hard to motivate myself to cook for myself or my husband. My lifestyle leaves little time for cooking, so I usually begin my meals already starving and at a later time than I wanted to eat. That said, there is a thrill of independence in cooking a decadent dinner – just for yourself…or even in the accomplishment of making a healthy, home cooked meal for one.
